The Ornellaia is an Italian red wine produced in Tuscany.
The grapes are harvested by hand and put into boxes of 15 kg each.
After a soft pressing, the grape juice is fermented at 26-30°C in steel tanks.
Thereafter follows the malolactic fermentation over 18 months in barrique barrels (70% new barrels and 30% second use). The wine has to age for another 12 months in the bottle before being released.
